I hate pie.
I know, I catch grief from everyone on this. I just do not care for pie, in any form. SO my alternative to baking a pie (which I have been asked to do this year) is making these DELICIOUS apple crisp mini cakes.

Ingredients:
3 large McIntosh apples – peeled, cored, and chopped
¼ cup water
2 tablespoons white sugar
½ teaspoon ground cinnamon, or to taste
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg (optional)
1 ½ cups butter
Directions:
Preheat your oven to 350°F (175°C) and grease four 12-cup mini muffin tins.
In a saucepan, combine apples, water, white sugar, and ½ teaspoon cinnamon. Simmer over medium-low heat for about 5 minutes until partially cooked, then remove from heat.
In a large bowl, mix flour, oats, brown sugar, 1 teaspoon cinnamon, and nutmeg. Cut butter into the mixture until crumbly.
Press a heaping tablespoon of the crust mixture into each mini muffin cup, covering the bottom and sides.
Add 2 teaspoons of apple filling into each cup and sprinkle remaining crust mixture on top.
Bake for 15–20 minutes until golden brown.
Let cool, serve, and enjoy!
